March 2021 Cheese Selection tasting notes
Buffalo Blue, BC
Easily one of the best Canadian-produced blues we have ever tasted! From a small family producer, Jason and Dawn Dykstra have produced some unique-styled cheeses, that are not of a direct comparison to most traditional blues. This well-aged blue, made from the milk of grass-fed Canadian water buffalo, offers a unique blend of rich, smooth flavour, with sharp bites of fresh grass and herbs, and a bright, forward citrus-like tang. A new blue experience.
Mont Jacob, Quebec (a staff favourite!)
Mont Jacob is made by Fromagerie Blackburn in Sagueneay-Lac-Saint-Jean, which is just north of Quebec City. It is an artisanal and fermier cheese, meaning the cheese is made on the same farm that the animals are raised and milked on. This classic monastery-style cheese is ages just over a month, and is regularly washed during the aging process, which gives it its orange, slightly tacky rind and a pronounced grassy, earthy aroma. The cheese is semi-soft with a smooth texture and slightly sweet, nutty flavour.
Prima Dona Maturo, Holland
This classic Dutch gouda is not aged for a specific amount of time, but rather until it reaches the desired flavour profile. It is aged carefully until the profile is bursting with flavours of butterscotch, sherry and caramel. The texture is dense and toffee-like, with a slight creaminess. The crystals,, which are just starting to form, are a result of the milk protein crystallizing as the cheese ages. This is an extremely versatile cheese, so feel free to experiment with wine, beer or scotch parings!
