MARCH 2021 CHARCUTERIE SELECTION TASTING NOTES

Port & Fig Salami

An air-dried salami, made with black Mission figs and a healthy dose of port wine. The sweet figs and port balance beautifully with the salted pork. The large diameter of this salami requires that it be aged for a minimum of 10 weeks. 

Merida Medium-Spicy Smoked Chorizo

A lightly smoked, spicy chorizo with its roots in the Yucatan peninsula. With local, Fraser Valley pork, picante Mexican chilies, and a dash or garlic, you won't want to miss out on this chorizo! This item is smoked, cured and dried until it is ready to eat. 

Schinkenspeck

The lovechild of black forest ham & prosciutto, this semi-lean cut of ham is cured in the traditional German style (essentially, a German-style prosciutto). It’s smoked and aged for at least six months. Great on a sandwich, as a smoky accent on a charcuterie platter, and as an alternative to ham or bacon at breakfast.
