July 2021 Cheese Selection tasting notes
Aged Goat Gouda, BC
We are so lucky to have these true artisan cheesemakers on our doorstep! The Smits family has been making gouda for generations, and now have a small farm in the Fraser Valley, just outside Chilliwack. They epitomize everything we love about cheese-making: they use only milk from their own herd of cattle & goats, making these true farmhouse cheeses. Their Goat Gouda is aged for 10 months to a year, giving it a firm texture with a nice balance of sharp sweetness.
14 Arpents, Quebec
14 arpents is a farmhouse cheese made from the milk of Swiss brown cows, a heritage variety of dairy cattle. The tangy, orange-hued washed rind is reminiscent of the famous Italian Taleggio and offers a yeasty “fresh bread” flavour, with a hint of hazelnut. Try this cheese with bright citrusy wheat beers, as well as oaked and unoaked Chardonnays.
Bleu D'Auvergne, France
The A.O.C of Bleu D’Auvergne encompasses the entire region of Auvergne and is one of the most popular and widely eaten blues of the region. It has a firm texture but is still creamy on the palate, and its flavor is full but not overpowering. Bleu D’Auvergne is a great eating cheese, but its texture and medium-strength also makes it ideal for many recipes. Try with a tawny port, ice wine, Zinfandel, or a big, fruity Shiraz.
