May 2021 Cheese Selection tasting notes
One of our favorite BC Producers is Kootenay Meadowsin Creston. They are one of the only producers in Western Canada making true alpine style cheeses. And not only are they doing it with raw milk, but they are certified organic as well. They produce true “farmhouse” cheeses, which means they raise and milk all the animals on the same farm as the cheese is made. This gives them unprecedented quality control over the entire process. Alpindon, “Gift of the Alpine,” is a firm cheese carefully modeled after French Beaufort d’Alpage. Following centuries old tradition, this cheese is hand-rubbed and made only with milk from summer pastures. It exhibits a smooth nutty flavour, a complex finish, a rich golden interior and a dark textured rind. Additional aging concentrates its flavours and deepens its complexity.
Le Sorcier, Quebec
This cheese is loosely modeled after France’s famed Morbier, which is where it inherits it’s layer of ash from. It is produced by Fromagerie Fritz Kaiser in Montérégie. It is a semi-soft washed rind cheese with a mild aroma and flavors of grass and hazelnuts. The Sorcier is an extra aged version of Fritz Kaiser’s award winning Duonier.
Brie de Meaux, France
This is one of only two Brie’s recognized by the French governing body (the A.O.C) as being a true brie. This is the real thing and is simply amazing. It has an outstanding vegetal, earthy flavor full of mushrooms and cauliflower notes and is a far cry from the mild creamy cheese we are often used to as brie. Brie de Meaux and Brie de Melun are the only name protected Bries existing in the world today – anything that just reads “Brie” is one of many interpretations of the real thing.
