These lemon squares are delightfully unique, and have captured the hearts of many Vancouver locals and visitors who’ve visited their stall on Granville Island.
Once you unwrap the charming brown paper packaging, you’ll notice the two distinct layers. The gorgeous pastel yellow buttercream frosting crowns the square, packed with fresh lemon juice and zest, balanced with just enough sweetness and rounded out by creamy texture. The base is a deliciously chewy coconut-graham cracker layer, creating a lovely contrast in texture and flavour. The team at Lemon Square work hard to make sure they strike the perfect balance between sweet and tart. We like them any time of day- if you’re feeling fancy, pair it with a glass of bubbles for afternoon tea or dessert. Or, treat yourself to a lemon square as a mid-morning indulgence with coffee.

The Lemon Square, a popular stand that has been making handmade, yummy lemon coconut squares since 2017. Dan Spratling, co-owner and talented chef from Melbourne, Australia, has worked at Chambar and Café Medina – 2 of the top restaurants in Vancouver. He also worked at the local Crofton House School for Girls as the school’s in-house chef, and at night would bake lemon squares for fun.
The recipe is inspired by the lemon squares in Dan’s Mom’s café growing up in Australia, but he’s spent time experimenting with the recipe to create the perfect mix- with real butter and fresh lemon juice and zest. Dan brought the squares to holiday dinner with Wally Mitchell, where the family raved, so much so that they convinced Wally and Dan to go into business together selling the Lemon Squares!
Dan still does the baking, but now has some help from his team. During the Christmas season, Dan and Wally are busy selling their lemon squares at Christmas Markets across Canada, from Vancouver to Toronto. Their love of making people happy and being able to introduce their delectable treats to foodies across Canada brings a smile to their faces and to those of everyone who tries a Lemon Square!
