JULY 2021 CHARCUTERIE SELECTION TASTING NOTES
A lightly smoked, savoury chorizo with its roots in Central Spain- made with Spanish pimenton and a dash of oregano. It is smoked, cured and dried until it is ready to eat. Enjoy on its own, or in stews, omelettes or on pizza. Pair with red wine or Spanish cider.
Saucisson Sec with Orange Confit
Oyama's version of the traditional French cured salami with an orange twist! The candied orange imparts a touch of sweet citrus to complement the savoury flavour of the cured pork. Air dried and aged for a minimum of 6 weeks.
Prosciutto di Parma
The gold standard of Italian prosciutto. Aged for at least 18 months in the sweet mountain air of the Parma region of Italy. Flavours are delicate and not too salty. Pairs well with fresh bread, juicy melon, and soft mozzarella.
