MAY 2021 CHARCUTERIE SELECTION TASTING NOTES

Pepper Salami
A dry-cured salami made from Fraser-Valley pork. The exterior is rolled is fresh ground pepper, which gives each slice a beautiful black “crust” for great flavour, and makes it instantly recognizable on the charcuterie board. Aged for a minimum of 6 weeks.

Finocchionna Salametti
A delicious air dried salami, made after an Italian inspired recipe with wild fennel, red wine and garlic. Makes a delicious hors d`oeuvre with olives and baguette. Aged a minimum of 6 weeks.

Oyama House Prosciutto
This is our version of an Italian style of prosciutto – it is pork leg cured with salt and then air-dried on the bone for a minimum of 12 months. It is butter tender and incredibly delicious!
