APRIL 2021 CHARCUTERIE SELECTION TASTING NOTES
Bison Smoked Salami
Made from free-range Canadian bison. A very lean smoked salami, the bison is combined with black pepper and hints of cumin. Pro tip: it's great on pizza!
Saucisson Sec de Bordeaux
Garlic and wine are key ingredients in this French-style salami made with local pork. Perfect size for sharing with a close friend. Air dried and aged for a minimum of 4 weeks. Pairs well with cheddars, blues and goudas.
Aged for a minimum of 18 months, this Spanish-style prosciutto is slightly firmer than its Italian cousins. The long aging period provides rich flavour with hints of nuts and smoke.
